- 6 large sweet peppers
- salt and pepper to taste
- 1/4 c. olive oil
- 1 medium onion, coarsely chopped
- 3 Tbsp. vinegar (more if desired)
- oregano
Directions

1Bake peppers in hot (450°) oven for about 20 minutes, or until wilted and soft.

2Remove seeds and outer skin.

3Cut in pieces; place in a bowl.

4Add onion, salt and pepper.

5Mix vinegar and olive oil; add to peppers.

6Sprinkle with oregano.

7Adjust seasonings, if necessary.

8Serve as an appetizer, or just with fresh Italian bread.
