Ingredients

  • 1/2 lb. thin sirloin tips (cut into strips)
  • 2 Tbsp. oil
  • 1/4 c. chopped onion (I use more)
  • 1 clove garlic
  • 1 tsp. salt
  • dash pepper
  • 1 beef bouillon cube
  • 1 c. hot water
  • 1 lb. can (2 cups) diced tomatoes
  • 1 large green pepper (thin rings)
  • 2 Tbsp. cornstarch
  • 1/4 c. cold water
  • 2 Tbsp. soy sauce

Directions

    Brown meat slowly in hot oil.

    Add onion, garlic, salt and pepper.

    Dissolve bouillon cube in hot water; add to meat.

    Cover and simmer slowly for 30 minutes.

    Add tomatoes and green pepper; cook another 30 minutes (or longer).

    Combine remaining ingredients and stir into meat mixture.

    Bring to a boil and cook, stirring constantly, 5 minutes longer.

    Remove garlic.

    Serve over hot rice.
