- 1 lb. beef round
- 1/4 c. soy sauce
- 1 garlic clove
- 1 1/2 tsp. grated fresh ginger
- 1/2 c. salad oil
- 1 c. green onions, thinly sliced
- 1 c. red and green peppers, thinly sliced
- 2 stalks celery, thinly sliced
- 1 Tbsp. cornstarch
- 1 c. water
- 2 tomatoes, cut into wedges
Directions

1Cut beef across the grain into thin strips.

2Combine soy sauce, garlic and ginger.

3Add beef; toss and set aside, preparing vegetables.

4Heat oil; add beef and toss over high heat until browned.

5Cover and simmer for 30 to 40 minutes over low heat. Turn heat up and add vegetables.

6Toss until vegetables are tender-crisp, about 10 minutes.

7Mix cornstarch with water; add to pan.

8Stir and cook until thickened.

9Add tomatoes and heat through.
