- 3 lb. tenderloin steak, sliced
- 3 green peppers, sliced
- 3 medium onions, sliced
- 9 large mushrooms, sliced or 1 (No. 202) can button mushrooms
- 3 tomatoes, quartered or 1 (No. 2 1/2) can tomatoes
- 1 1/2 c. Espagnole Sauce
- 3/4 c. butter
- 1/2 c. flour
- 6 Tbsp. red Burgundy
- salt and pepper
Directions

1First prepare green pepper sauce: Saute green pepper, onions, mushrooms and tomatoes in 1/2 cup butter for 5 minutes.

2Add Espagnole Sauce and simmer 10 minutes.

3Salt and pepper steak slices and dredge in flour.

4Saute in remaining 1/4 cup butter for 2 minutes.

5Add green pepper sauce and simmer 15 minutes.

6Add wine and simmer for 3 minutes.

7Serve piping hot.
