  • 3 tablespoons olive oil
  • 1 (1- to 2-pound) sirloin steak, cut into 1-inch cubes
  • 1 tablespoon unbleached all-purpose flour
  • 2 celery stalks, thinly sliced
  • 1 large onion, thickly sliced
  • 2 cups beef broth
  • Pinch of red pepper flakes (or dash of hot sauce)
  • Dash of Worcestershire sauce
  • Splash of red wine
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped

    In a large pan set over medium heat, heat the oil.

    Add the steak and cook, turning, until well browned on all sides, about 5 minutes total.
