Peppered Salmon Steaks

- 1 Tbsp. coarsely ground pepper
- 1 tsp. Italian seasonings
- 1/4 tsp. garlic powder (not garlic salt)
- 1/2 tsp. dry mustard
- 2 lb. salmon steak fillets
- 1 or 2 Tbsp. olive oil
Directions

1Prepare charcoal fire or preheat broiler.

2Combine seasonings in small bowl.

3Rinse fish in cold water and pat dry with paper towels.

4Rub olive oil onto salmon steaks.

5Rub seasoning mixture onto both sides of salmon steaks.

6Grill over charcoal or broil in oven until no longer opaque in center (about 5 minutes per side). Makes 4 servings per recipe.

7(You can also use halibut, tuna, swordfish or grouper.)
