- 2 cup sugar
- 1 tsp cream of tartar
- 3/4 cup boiling water
- 10 drops peppermint extract
- 1 Food coloring of your choice

1Mix sugar, cream of tartar and water in a medium saucepan.

2Boil to 238F (soft ball stage) on a candy thermometer.

3Remove from stove and cool without stirring.

4When cooled add peppermint.

5Beat until creamy.

6Divide and color each portion with food coloring into pastels, if you'd like.

7Drop from a teaspoon onto wax paper.

8*For other flavors, use lemon, orange, or another extract flavor, instead of peppermint.
