Peppermint Candy Canes

- 2 c. sugar
- 1/2 c. light corn syrup
- 1/2 c. water
- 1/4 tsp. cream of tartar
- 3/4 tsp. peppermint extract
- 1 tsp. red food coloring
Directions

1Combine sugar, corn syrup, water and cream of tartar; stir until sugar dissolves.

2Cook, stirring, to very hard ball stage (265°).

3Remove from heat and add peppermint extract.

4Divide in 1 portion; add food coloring to 1 part.

5Pour out on greased platters.

6When cool enough to handle, pull each part separately. Form in ropes and twist red part around white.

7Cut in 8-inch lengths and form in the shape of candy canes.

8Makes 10 canes.
