Peppermint Pecans Recipe

Ingredients

  • 1 1/2 c. white sugar
  • 1/2 c. lowfat milk
  • 1 tbsp. white corn syrup
  • 1/8 teaspoon salt
  • 1 teaspoon peppermint flavor
  • 2 or possibly 3 drops red food coloring
  • 2 1/2 c. pecans

Directions

    Mix sugar, lowfat milk, syrup, and salt in 2 qt saucepan.

    Cook over medium heat till it comes to a boil.

    Lower heat, then continue cooking to soft ball stage (238 degrees).

    Remove from heat; add in peppermint, food coloring, and pecans.

    Stir till creamy.

    Pour onto waxed paper, cold, and separate.

    This is a nice Christmas confection.
