Ingredients
- 1/2 c. onion, chopped
- 1/2 c. cauliflower, cooked
- 2 to 3 Tbsp. olive oil
- 1/3 c. Parmesan cheese, grated
- 1 c. zucchini or broccoli, cooked
- 5 eggs, slightly beaten
- 3 1/2 oz. pkg. Hormel pepperoni, sliced
Directions

1In medium skillet, saute onion in oil until tender.

2Add zucchini (or broccoli) and cauliflower in bowl.

3Beat eggs and cheese until blended.

4Add pepperoni.

5Pour over vegetables in skillet.

6Cook over low heat about 15 minutes until set.

7When only surface is moist, run skillet under broiler one minute or until surface is set.

8Serve from skillet or on a serving plate.
