Pepperoni Snack Crackers

  • 8 ritz-style crackers
  • 8 pepperoni slices, of preferred thickness
  • 1 ounce of favorite cheese, shredded (I use Colby Jack, Mozzerella and or or Cheddar)
  • 2 tablespoons ranch dressing
  • Tabasco sauce (optional)

Directions

    Spread pepperoni slices out on a paper towel and microwave for 15 seconds, just enough to draw some of the grease out [Will prevent crackers from getting soggy as well as lowering the fat content].

    Place crackers on a paper plate and distribute cheese to each of them.

    Put a slice pepperoni on each cracker.

    Top each cracker with dressing and a single drop of Tobasco sauce.

    [optional] microwave again for 15-30 seconds, or until cheese begins melting.
