- 1 1/2 tsp. paprika
- 1/4 tsp. pepper
- 1 (3 lb.) broiler-fryer, cut up

Directions

1In a paper bag, combine the flour and seasonings. Add a few chicken pieces at a time and shake.

2Remove the chicken to a plate and let the coating dry. In a skillet, heat 1/2-inch of oil. Lightly brown the meaty sides of the chicken first.

3Lightly brown the other side. Reduce the heat and cover. Simmer for 30 minutes. Uncover for the last 10 minutes.
