- 1/4 tsp. cream of tartar
- 6 Tbsp. sugar

1Beat egg whites with vanilla and cream of tartar until soft peaks form.

2Don't overbeat the egg whites before adding the sugar or the meringue will leak, making the top of the pie filling moist and slipping.

3Gradually add sugar, beating until stiff glossy peaks form and sugar dissolves.

4Rub some meringue between your fingers.

5You should not feel any sugar granules.

6Spread meringue over hot filling.

7Bake at 350° for 12 to 15 minutes.
