Perfect Pecan Pie

  • 3 to 3-1/2 cups pecan halves
  • 4 lg. eggs
  • 1 cup brown sugar
  • 6 tbsp. butter, melted
  • 1 cup dark corn syrup
  • 3 tsp. vanilla extract
  • 1 premade pastry crust

Directions

    Heat oven to 350F.

    Chop up 2 cups of the pecan halves; set aside.

    Beat the eggs, corn syrup, butter, brown sugar, and vanilla in a mixing bowl until well blended (about 2 minutes).

    Add the chopped pecans and stir.

    Pour filling into the pastry shell.

    Add remaining pecan halves to top of pie filling and put into a concentric design.

    Bake for 70 minutes at 350F.

    Cool.

    Serve with whipped cream or vanilla ice cream.
