- 1 pkg. active dry yeast
- 2 c. milk, scalded
- 2 tsp. shortening
- 5 3/4 to 6 1/4 c. all-purpose flour
- 1/4 c. warm water
- 2 tsp. sugar
- 1 Tbsp. salt
Directions

1Soften dry yeast in warm water (110°).

2Combine hot milk, sugar, salt and shortening.

3Cool to lukewarm.

4Stir in 2 cups of the flour; beat well.

5Add the softened yeast; mix.

6Add enough flour to make dough medium stiff.

7Turn out on lightly floured surface; knead until smooth (8 to 10 minutes).

8Shape in a ball; place in lightly greased bowl.

9Turn once to grease surface. Cover; let rise until double in size (1 1/4 hours).

10Punch down. Cut in 2 portions.

11Shape each into smooth ball; cover; let rise 10 minutes.

12Shape in loaves; place in greased 9 x 5 x 3-inch loaf pans, covered.

13Let rise until doubled (45 to 60 minutes).

14Bake in 400° oven for 35 minutes or until done.

15Makes 2 loaves.
