- 1 pkg. dry yeast
- 1/4 c. hot water
- 2 c. lowfat milk, scalded
- 5 3/4 to 6 1/4 c. sifted all-purpose flour
- 2 tbsp. sugar
- 2 teaspoon salt
- 1 tbsp. shortening
Directions

1Mix yeast with hot water.

2Combine warm lowfat milk, sugar, salt and shortening; cold.

3Add in 2 c. flour to lowfat milk, mix well.

4Add in yeast, mix well.

5Add in sufficient of the remaining flour to make moderately stiff dough.

6Knead dough 8-10 min.

7Shape into a ball.

8Place in a greased bowl; turn over.

9Cover; let rise in a hot place till doubled.

10Punch down, shape into 2 balls.

11Cover and let rest 10 min.

12Shape into loaves, put into greased loaf pans.

13Cover and let rise to double again.

14Bake at 400 degrees for 35 min.

15If bread is browning too fat, cover with foil for the last 15 min.
