- 3 cups shredded zucchini
- 1 23 cups sugar
- 23 cup vegetable oil
- 4 eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 12 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 12 teaspoon ground cloves
- 1 teaspoon salt
- 12 cup walnuts, chopped
- 12 cup raisins
Directions

1Preheat oven to 350 degrees.

2Grease only the bottoms of two 8 by 4 inch loaf pans.

3In a large mixing bowl stir together zucchini, sugar, oil, eggs, and vanilla.

4Stir in flour, baking soda, baking powder, cinnamon, cloves, and salt.

5Mix in walnuts and raisins.

6Divide batter evenly between prepared pans.

7Bake until a toothpick inserted into the center comes out clean, 50 to 60 minutes.

8Cool bread in pans for 10 minutes.

9Loosen the sides of the loaves, remove from pans and place top side up onto cooling racks.
