- 2 eggs
- 3/4 cup sugar
- 1/2 cup oil
- 1 cup persimmon pulp
- 1 tsp. soda (add to pulp)
- 1 1/2 cup sifted flour
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 cup chopped walnuts
- 1/2 cup chopped dates
Directions

1Blend eggs, sugar and oil. Mix soda into pulp, add to sugar mix.

2Sift flour and dry ingredients.

3Add nuts and dates to dry ingredients.

4Fold into persimmon mixture.

5Pour into oiled pan. Bake 325° for 1 1/2 hours.
