  • 2 c. flour (all-purpose)
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. soda
  • 1 c. persimmon pulp
  • 2 eggs, beaten
  • 1 c. sugar
  • 1/2 c. sugar
  • 1/2 c. cooking oil
  • 3/4 c. nuts, if desired
  • 1 c. raisins, if desired

    Thoroughly beat together pulp, sugar and eggs.

    Add dry ingredients, then cooking oil.

    Bake in square pan or 2 small loaf pans at 350° for about 45 minutes.
