  • 1 cup margarine softened
  • 1 1/4 cups sugar
  • 1/2 cup liquid egg substitute or 3 eggs
  • 1 each eggs
  • 2 teaspoons vanilla extract or lemon extract
  • 223 cups flour, all-purpose
  • 1 cup cornmeal
  • 1 teaspoon nutmeg ground
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup bing (sweet) cherries dried, raisins work too

Directions

    Preheat oven to 400F (200C).

    Mix butter and sugar until creamy.

    Beat in eggs and extract.

    Mix dry ingredients; add to creamed mixture.

    Stir in cherries/raisins.

    Drop by teaspoonfuls onto greased baking sheet, about 2 inches apart.

    Bake for about 10 minutes or until lightly browned.

    Remove from baking sheet while warm.
