- 8 Tbsp. melted butter (1 stick)
- 2 c. sugar
- 2 eggs, beaten
- 2 tsp. vanilla
- 2 c. persimmon pulp
- 2 c. flour
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. baking powder
- 2 tsp. soda
- 1/2 c. milk
- 2 c. raisins
- 2 c. chopped nuts
Directions

1Cream butter and sugar together.

2Add eggs and vanilla.

3Add persimmon pulp.

4Sift the next 5 ingredients together.

5Add alternately with milk to sugar mixture.

6Add raisins and nuts.

7Put into a greased 13 x 9 baking pan or mold pan.

8Bake at 375° for 40 to 45 minutes.

9Serve warm or cold with whipped cream or glaze.
