Persimmon Drop Cookies

Ingredients

  • 1 c. persimmon pulp
  • 1 tsp. soda
  • 1 c. sugar
  • 1/2 c. shortening (part butter or margarine)
  • 1 egg, beaten
  • 2 c. flour
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 c. chopped nuts
  • 1 c. raisins

    Beat thoroughly the persimmon pulp, soda, sugar and shortening until creamy. Add egg. Beat well. Sift flour, spices and salt. Add dry ingredients with nuts and raisins.

    Drop by teaspoonfuls on greased baking sheet. Bake at 375° for 12 to 15 minutes.
