- 1 tsp. vanilla
- 1 c. sugar
- 1 c. persimmon pulp
- 1/2 c. milk
- 1 tsp. cinnamon
- 2 eggs (unbeaten)
- 2 c. unsifted flour
- 2 1/2 tsp. double-acting baking powder
Directions

1Place shortening, salt and vanilla extract in mixing bowl. Beat at speed 5 until blended, about 30 seconds.

2Add sugar, gradually continuing to beat, until thoroughly creamed, about 2 minutes.

3Add eggs, one at a time, beating at speed 5 until well blended, about 1 1/2 minutes.

4Sift together flour, cinnamon and baking powder.
