  • 1 c. persimmon pulp
  • 1 1/2 c. sugar
  • 1 1/2 tsp. soda
  • 1 tsp. cinnamon
  • 2 tsp. baking powder
  • 2 Tbsp. lard
  • 1 c. sour milk (made by adding 1 Tbsp. vinegar to 1 c. sweet milk)
  • 2 eggs
  • 1 c. flour or enough for a thin batter

    Mix all ingredients together.

    Pour in a greased and floured 13 x 9-inch pan and bake at 350° for 35 to 40 minutes or until done.
