Persimmon Pudding

  • 1 qt. persimmons
  • 2 1/2 c. sugar
  • 1/4 lb. butter, melted
  • 3 eggs
  • 1 c. plain flour
  • pinch of soda
  • 1 tall can evaporated milk, undiluted
  • 1 Tbsp. vanilla

Directions

    Mash persimmons through colander (makes about 1 cup of pulp). Add melted butter to pulp.

    Then add remaining ingredients.

    Bake in large pan at 400° for about 30 minutes or until brown.

    Use 11 x 14-inch pan.
