Persimmon Pudding

  • 2 eggs
  • 1 1/2 c. sugar plus a little more
  • 1 1/2 c. milk
  • 2 c. persimmons (pulp)
  • 1/2 c. margarine
  • 2 c. self-rising flour

Directions

    Strain persimmons through a sieve to remove skin and seeds. Mix together with mixer.

    Grease 11 x 13-inch pan with the margarine and dot rest of margarine on top of mixture.

    Bake at 350°

    until done, 30 to 45 minutes.
