Persimmon Pudding

Ingredients

  • 1 c. flour
  • 1 c. sugar
  • 1 tsp. soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 c. persimmon pulp
  • 2 Tbsp. lemon juice
  • 1/2 c. melted oleo
  • 1 c. raisins, chopped
  • 1 c. dates, chopped
  • 1 c. nuts, chopped

Directions

    Sift flour, spices and sugar together.

    Mix soda into pulp and lemon juice (be careful, this will foam up, use large bowl!).

    Add pulp to dry ingredients.

    Add chopped nuts, dates and raisins. Mix well.

    Pour into well oiled loaf pan.

    Bake at 350° for 1 hour.
