Ingredients

  • 2 c. brown sugar or 1 1/2 c. white sugar
  • 2 c. milk
  • 4 c. persimmons or 1 c. persimmon pulp
  • 3 tsp. baking powder
  • 1 tsp. soda
  • pinch of salt
  • 1 1/2 c. flour or enough to make a cake
  • 2 eggs, beaten
  • butter or lard the size of a walnut
  • cinnamon, cloves or nutmeg (optional)

Directions

    Mix milk and persimmons; squeeze with your hand and run through a colander or sifter.

    If using the 1 cup persimmon pulp, omit milk.

    Mix pulp with remaining ingredients and pour into iron skillet.

    Bake at 350° for 35 to 40 minutes.
