- 2 c. brown sugar or 1 1/2 c. white sugar
- 2 c. milk
- 4 c. persimmons or 1 c. persimmon pulp
- 3 tsp. baking powder
- 1 tsp. soda
- pinch of salt
- 1 1/2 c. flour or enough to make a cake
- 2 eggs, beaten
- butter or lard the size of a walnut
- cinnamon, cloves or nutmeg (optional)
Directions

1Mix milk and persimmons; squeeze with your hand and run through a colander or sifter.

2If using the 1 cup persimmon pulp, omit milk.

3Mix pulp with remaining ingredients and pour into iron skillet.

4Bake at 350° for 35 to 40 minutes.
