Persimmon Pudding

  • 1 c. persimmon pulp
  • 2 c. white sugar
  • 2 c. sweet milk
  • 2 c. sweet potatoes, grated or boiled
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 c. melted butter or margarine
  • 2 eggs
  • 1/2 tsp. soda
  • 1 tsp. cinnamon
  • 1/4 tsp. allspice

Directions

    Mix persimmon, sweet potatoes, sugar, eggs and milk together. Add flour mixture (dry ingredients, which have been mixed together), a little at a time, beating until smooth after each addition.

    Stir in butter.

    Pour mixture into greased and floured baking pan.

    Bake in oven at 350° until firm, about 1 1/4 hours. Nuts, raisins or coconut may be added, if desired.
