- 5 lb. eye of the round roast
- 1 carrot
- 4 cloves garlic
- salt and pepper
Directions

1Trim eye of the round roast.

2Make gashes 1 1/2 to 2-inches apart the length of the roast and in three rows.

3Alternately insert slivers of raw carrot and tiny slivers of garlic.

4Salt heavily and pepper.

5Bake in open pan at 350° for about 3 hours or until desired doneness.

6Add enough water in pan during cooking to keep from sticking but be careful not to add too much.
