Ingredients

  • spaghetti to taste
  • 2 garlic cloves chopped
  • 2 tablespoons peanuts shelled
  • 3 tablespoons olive oil
  • 10 chive large, sprigs
  • 5 chive small, sprigs
  • 1 scallion white part
  • 1 mint leaf fresh
  • 1 teaspoon red wine vinegar
  • 3 tablespoons hot water
  • salt
  • ground mustard to taste
  • grated Parmesan to taste

Directions

    Cook the spaghetti in water, salt, and a drizzle of olive oil.

    Heat a little olive oil in a frying pan, and saute the garlic cloves and the peanuts for a few minutes.

    In the food processor, add the chives, garlic cloves, peanuts, scallion, mint, vinegar, and the remaining olive oil. Beat to a homogeneous cream. Add 3 tablespoons of hot water while the cream is forming. Season with salt and ground mustard.

    Add the cream to spaghetti, sprinkle with cheese and chives.
