- spaghetti to taste
- 2 garlic cloves chopped
- 2 tablespoons peanuts shelled
- 3 tablespoons olive oil
- 10 chive large, sprigs
- 5 chive small, sprigs
- 1 scallion white part
- 1 mint leaf fresh
- 1 teaspoon red wine vinegar
- 3 tablespoons hot water
- salt
- ground mustard to taste
- grated Parmesan to taste
Directions

1Cook the spaghetti in water, salt, and a drizzle of olive oil.

2Heat a little olive oil in a frying pan, and saute the garlic cloves and the peanuts for a few minutes.

3In the food processor, add the chives, garlic cloves, peanuts, scallion, mint, vinegar, and the remaining olive oil. Beat to a homogeneous cream. Add 3 tablespoons of hot water while the cream is forming. Season with salt and ground mustard.

4Add the cream to spaghetti, sprinkle with cheese and chives.
