Pesto Tofu

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 12 teaspoon salt
- 1 lb tofu, squeezed and chopped
- 14 cup pesto sauce
- 1 medium tomatoes, diced
- 14 cup pine nuts
Directions

1Heat the oil over medium-high heat, add the onion and saute for 2 minutes.

2Add salt and continue sauteing until the onion just starts to turn translucent.

3Add in the tofu and continue cooking for 3-4 minutes.

4It's ok if the pan seems quite dry as the tofu will brown a bit.

5Stir in the pesto, tomato, and nuts and cook until thoroughly heated.

6Taste and add more salt and/or pesto if needed.
