- 2 lb. lean, boneless beef, cut into small chunks (chuck or bottom round)
- 1 or 2 onions, chopped
- 1 Tbsp. garlic powder
- 1 can chopped green chilies
- 2 Tbsp. cornstarch
- 4 c. water
- salt, pepper and chili powder to taste
Directions

1Brown beef in heavy Dutch oven or skillet.

2Lightly brown onions; drain fat, but keep the brown flavor by deglazing skillet or using the Dutch oven.

3Add chilies and garlic to beef and onions, along with 3 cups water.

4Simmer over low heat for 3 hours.

5Careful, don't let it boil dry (meat should fall apart).
