- 5 to 6 baking potatoes
- 1 bunch fresh broccoli
- 1/3 c. olive oil
- 1/3 c. fresh Parmesan cheese, grated
- black pepper, coarsely ground
Directions

1Parboil potatoes and broccoli.

2Cut both into bite-sized pieces.

3Cut onion into large chunks.

4Place 1/2 of these ingredients in casserole and cover with 1/2 of olive oil.

5Add remaining 1/2 of vegetables, cover with remaining oil and season liberally.

6Sprinkle cheese on top.

7Bake 30 minutes at 400°.
