Philly Cheddar Grilled Cheese

  • 2 tablespoons unsalted butter, softened
  • 2 cups mushrooms, sliced
  • 12 teaspoon horseradish
  • 4 slices white whole grain bread
  • 2 ounces thinly sliced sharp cheddar cheese
  • 2 ounces thinly sliced roast beef

    In skillet, melt 2 t of the unsalted butter over medium heat.

    Add the mushrooms and cook about 6 minutes.

    Stir in horseradish.

    Remove mixture from skillet; wipe clean.

    Place 4 slices whole-grain white bread on work surface.

    Using remaining butter, coat 1 side of each bread slice.

    Turn 2 slices over; divide 1 ounce of the cheese, 2 ounces of the roast beef slices and mushrooms between slices.

    Top with 1 ounce of the remaining cheddar cheese.

    Top with remaining bread slices, butter side up.

    In same covered skillet over medium heat, cook 4 minutes, turning once.
