Ingredients
- 1 large can whole tomatoes
- 1 can pitted black olives
- 1 small chopped onion
- 1 to 2 tsp. chili powder
- 1 tsp. Italian seasoning
- 1 Tbsp. sugar
- 1 or 2 bay leaves
- 4 to 8 c. cooked rice (either regular or Minute)
- sour cream (optional)
Directions

1Crush tomatoes and return to juice.

2Place all ingredients, except rice, in large pot.

3Bring to a boil, then simmer, covered, for 30 minutes.

4Cook rice according to package directions.

5When sauce and rice are cooked, mix them together in a large bowl.

6Top with a little sour cream, if desired.
