- 6 boneless chicken breasts
- 3/4 c. onion, coarsely chopped
- 3 garlic cloves, minced
- 1 Tbsp. vegetable oil
- 1 1/4 c. chicken broth
- 1 c. medium salsa or picante sauce
- 1 c. Uncle Ben's converted rice
- 1 medium tomato, chopped
- 1/2 c. (2 oz.) shredded Cheddar or Monterey cheese
- 1 ripe avocado, peeled and sliced (optional)
- salt to taste
Directions

1Sprinkle chicken breasts with salt; set aside.

2Cook onion and garlic in oil in 10-inch skillet 2 minutes.

3Add chicken broth and salsa.

4Bring to boil.

5Stir in rice.

6Arrange chicken breasts over rice.

7Cover tightly and simmer 20 minutes.

8Remove from heat.

9Let stand, covered, until all liquid is absorbed, about 5 minutes. Garnish with tomato, avocado and cheese.

10Serve with tortilla chips or soft flour tortillas.
