Ingredients

  • 1 c. all-purpose flour
  • 3/4 c. yellow cornmeal
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. buttermilk
  • 2 eggs or egg substitute
  • 6 Tbsp. picante sauce
  • 1/4 c. butter or margarine, melted and cooled (applesauce can be used if you don't want the fat, same amount)

Directions

    Combine flour, cornmeal, baking powder, baking soda and salt in a large bowl.

    Add buttermilk, eggs or egg substitute, picante sauce and butter last.

    Stir just until ingredients are blended. Fill 12 well-greased muffin cups almost full.

    Bake at 425° for 15 to 20 minutes or until wooden pick inserted in center comes out clean.
