- 1 c. all-purpose flour
- 3/4 c. yellow cornmeal
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. buttermilk
- 2 eggs or egg substitute
- 6 Tbsp. picante sauce
- 1/4 c. butter or margarine, melted and cooled (applesauce can be used if you don't want the fat, same amount)
Directions

1Combine flour, cornmeal, baking powder, baking soda and salt in a large bowl.

2Add buttermilk, eggs or egg substitute, picante sauce and butter last.

3Stir just until ingredients are blended. Fill 12 well-greased muffin cups almost full.

4Bake at 425° for 15 to 20 minutes or until wooden pick inserted in center comes out clean.
