Picante Potatoes

  • 6 medium red potatoes, washed
  • 2 medium onions, cut in half lengthwise, cut crosswise into thin slices
  • 1/2 c. water
  • 1 stick butter, melted
  • Salt and black pepper
  • 1 c. Pace picante sauce
  • 1 c. shredded cheddar cheese

Directions

    Spray 9 x 11 ovenproof dish with cooking spray.

    Cut unpeeled potatoes crosswise into 1/8 or 1/4 inch slices, being careful not to cut all the way through so the potato remains intact.

    Place cut side up in dish.

    Slip onion slices in between cuts in potato, rounded side up. Pour 1/2 cup water

    into dish.

    Pour butter evenly over potatoes; sprinkle lightly with salt and pepper. Cover with foil and bake in preheated oven at 425° 1 hour 15 minutes or until fork tender. Remove from oven; spoon picante sauce evenly over each potato. Sprinkle with cheese; return to oven and bake uncovered just until cheese is melted.
