  • 16 c. tomatoes, peeled and chopped (use food processor)
  • 4 c. onions, chopped
  • 1/4 to 1/2 c. cayenne peppers, chopped
  • 1/4 c. salt
  • 1 tsp. alum
  • 2 tsp. black pepper
  • 1 1/2 Tbsp. chili powder
  • 1 tsp. cumin
  • 1 1/2 c. vinegar

Directions

    Simmer 1 1/2 hours or until thickened as you like it.

    Put into pint jars and process 30 minutes in boiling water bath. Makes 10 pints.
