Ingredients

  • 22 medium green tomatoes, quartered
  • 1 pt. small onions (yellow)
  • 6 green peppers, cut 1/4-inch lengthwise
  • 6 sweet red peppers, cut 1/4-inch lengthwise
  • 1 qt. vinegar
  • 1/2 qt. vinegar
  • 3 1/2 c. sugar
  • 1/4 c. salt
  • 1 1/2 tsp. allspice
  • 1 1/2 tsp. cinnamon
  • 4 tsp. celery seed
  • 1/2 c. mustard seed

Directions

    Wash and chop the tomatoes, onions, green peppers and red peppers (discarding liquid is optional).

    Place in a large pot. Add the 1 quart vinegar.

    Boil 30 minutes, stirring often.

    Add the remaining ingredients.

    Simmer 3 minutes and keep simmering while packing one jar at a time, sealing immediately.

    Makes 6 to 7 pints.
