- 22 medium green tomatoes, quartered
- 1 pt. small onions (yellow)
- 6 green peppers, cut 1/4-inch lengthwise
- 6 sweet red peppers, cut 1/4-inch lengthwise
- 1 qt. vinegar
- 1/2 qt. vinegar
- 3 1/2 c. sugar
- 1/4 c. salt
- 1 1/2 tsp. allspice
- 1 1/2 tsp. cinnamon
- 4 tsp. celery seed
- 1/2 c. mustard seed
Directions

1Wash and chop the tomatoes, onions, green peppers and red peppers (discarding liquid is optional).

2Place in a large pot. Add the 1 quart vinegar.

3Boil 30 minutes, stirring often.

4Add the remaining ingredients.

5Simmer 3 minutes and keep simmering while packing one jar at a time, sealing immediately.

6Makes 6 to 7 pints.
