  • 1 peck green tomatoes
  • 12 sweet peppers (red)
  • 12 sweet peppers (green)
  • 12 onions
  • 3 stalks celery
  • 3/4 c. salt
  • 2 qt. cider vinegar
  • 3 lb. brown sugar
  • 1 Tbsp. mustard seed
  • 1 Tbsp. whole cloves
  • 1 Tbsp. stick cinnamon

    Core tomatoes.

    Grind tomatoes, peppers, onion and celery. Mix in salt; let stand overnight.

    Drain well.

    Combine sugar and vinegar.

    Heat, stirring, until sugar melts.

    Add mustard seed. Tie cloves and cinnamon in small bag and add to mixture.

    Bring to simmer.

    Cook 35 minutes after it starts to boil.
