- 6 1/2 lb. beets
- 3 c. cider vinegar
- 4 or 5 c. white sugar
- mixed spices
Directions

1Cook beets.

2Leave 2 inches of top stems while cooking.

3When beets are clean from all dirt, boil about 20 minutes to 1 hour, according to size, until tender.

4Drain off and use cold water to cool enough to peel.

5When peeled, put in clean pot.

6Add vinegar, sugar and spices.

7If vinegar is too strong, add a little water. Heat to simmer.

8Pack in hot jars; seal.

9Should make 6 pints.
