  • 2 gal. fresh beets, washed and stem cut to about 1-inch from top
  • 4 c. vinegar
  • 6 c. sugar
  • 1/4 c. allspice

Directions

    Cover fresh beets in boiler in water.

    Cook until tender.

    Pour off hot water; run cold water over beets.

    When cool enough, peel beets and slice large beets; if small, leave whole.
