- 2 gal. fresh beets, washed and stem cut to about 1-inch from top
- 4 c. vinegar
- 6 c. sugar
- 1/4 c. allspice

1Cover fresh beets in boiler in water.

2Cook until tender.

3Pour off hot water; run cold water over beets.

4When cool enough, peel beets and slice large beets; if small, leave whole.
