- 5 lb. brown sugar
- 2 oz. cayenne pepper
- 2 oz. black pepper
Directions

1Mix together for 100 pounds to 120 pounds of meat.

2Cut meat into squares.

3Rub mixture all over meat.

4Pack in stone jar. Put a weight on top.

5Brine will cover meat.

6Let set about 2 or 3 weeks. When ready to eat, slice and roll in flour and fry as chicken.
