Pickled Asparagus

Ingredients
- 1 1/2 qt. water
- 1 qt. white vinegar
- 5 Tbsp. plain salt (non iodized)
- 2 Tbsp. pickling spices
- 7 lb. fresh asparagus
- garlic cloves (1 per jar)
- hot chili peppers (1 per jar)
Directions

1Bring to boil water, vinegar and salt.

2Boil 15 minutes. Remove all cloves from pickling spice; wrap remaining spice in cheesecloth or tea holder and hang in vinegar mixture.

3Trim asparagus and blanch for 1 1/2 minutes.

4Then plunge into ice water.

5Place in each jar 1 clove garlic and 1 hot chili.

6Pack asparagus in wide-mouth jar standing on end.

7Then pour hot brine into jars.

8Seal jars and store 2 or 3 months before opening.
