- 3 qt. peeled, cooked beets
- 2 c. sugar
- 2 sticks cinnamon
- 1 Tbsp. whole allspice
- 1 1/2 tsp. salt
- 3 1/2 c. vinegar
- 1 1/2 c. water
- onion rings (optional)
Directions

1Combine all ingredients, except beets, in a large saucepan. Simmer 15 minutes.

2Pack beets into hot jars, leaving 1/4-inch head room.

3Remove cinnamon.

4Bring pickling liquid to a boil. Pour hot liquid over beets.

5Leave 1/4-inch head room.

6Remove air bubbles.

7Adjust caps.

8Process pints and quarts 30 minutes in boiling water bath.

9Yields 6 pints.
