  • 2 c. white vinegar
  • 1 c. water
  • 1 tsp. pickling spice
  • 2 c. sugar
  • 1 tsp. salt

Directions

    Peel raw beets. Cook until tender. Combine first 5 ingredients in a saucepan.

    Heat to boiling.

    Add cooked beets.

    Simmer 10 minutes.

    Pack beets into canning jars.

    Pour syrup over beets. Seal. Yields about 4 pints.
