  • 1 large can sliced beets, drain and set aside juice
  • 2 Tbsp. sugar
  • 2 Tbsp. pickle relish
  • 1/2 c. vinegar

    Boil juice, vinegar and sugar for 2 to 3 minutes.

    Pour over beets.

    Cool and put in refrigerator to chill.
