  • 3 qt. or 12 lb. raw beets
  • 3 c. cider vinegar
  • 2 c. sugar
  • 1 c. light brown sugar
  • 2 c. water
  • 2 Tbsp. mixed pickle spice
  • 2 (1-inch) pieces stick cinnamon
  • 2 Tbsp. salt

Directions

    Wash and remove leaves from beets. Place in a large kettle of water. Bring to a boil and cook until skins will slip off when held in cold water and gently twist with fingers. Rinse lightly and drain in a colander.
